<p><strong>1. The unique taste of Sicilian Wine</strong></p>
<p>According to legend, Dionysus was the God who brought pleasure to mankind, and wine to Sicily. So, no wonder the island has more vineyards than any other region in Italy. While Sicilian dessert wines are internationally renowned (about 90 % of the total DOC production), its red and whites should not be disregarded. From the rich red wine Cottanera Etna Rosso to the fruitier white Bianco D'Alcamo – Sicily has a lot on offer. And the best thing: it goes very well with its delicious food.</p>
<p><strong>2. Sicilian Street</strong><strong> Markets</strong></p>
<p>In Sicily, like in most other parts in Italy, the locals love to use seasonal produce. That’s what makes the food wonderfully fresh and delicious. <p>Admittedly, we could have probably put this under desserts. But it wouldn’t do the Sicilian ice-cream justice. So, if you are an ice-cream fan, you definitely have to pencil in a trip to Sicily. Legend has it that gelato originated from the snows of Mount Etna – whether that’s true or not, it’s delicious! <p>When asking local Italians about what the best region for food is, they would always vouch for their own home town (which often means their mother’s kitchen). But, when you ask them for an honest answer (and take their home town out off the equation) most Italians will say the same: Sicily. Why, you ask? Well, Sicily is very distinctive to the rest of Italy. Over the centuries, its cuisine has adopted the best food traditions from many different cultured. Occupiers that invaded the island and conquered its people left their food behind.</p>
<h2>Sicilian Wine</h2>
<p><strong>“<em>Bonu vinu fa bonu sangu.</em>” – “Good wine makes good blood.”</strong></p>
<p>Legend has it that the Greek god Dionysus introduced madness to mankind – and wine to Sicily. Whilst occupying Sicily in the 8<span>th</span> century B.C., the Greeks brought wine (onios) with them. Sicilian now call it “vinu” – the nectar of the gods.<br/>Nero D’Avola wine, famous for Sicily, is made out off grapes that have remained unchanged for over 2,700 years. And, through the alchemy of viticulture, you are sharing something very important with the likes of Archimedes, Aeschylus and Sappho (who all lived in Sicily at some point of their lives).</p>

<h2>Piazza Grande</h2>
<p>This medieval square is set right in the heart of the city and historically was the main marketplace. Sadly much of the Medieval city was destroyed during WWII, however luckily the piazza survived as well as the Romanesque church of Santa Maria della Pieve which sits on the square. The Piazza is the perfect place to take part in the Italian tradition of “<em>La Passeggiata</em>”, which is a gentle, evening stroll through the streets. And, for those who are fans of Italian films, this beautiful town was used as the setting for Roberto Benigni’s film <em>Life is Beautiful</em>. </p>

<h2>Coffee</h2>
<p>Our favourite place in Arezzo to stop off for a coffee and a well deserved sweet treat is the Pasticceria Tiffany. There is plenty of seating inside for those looking to escape the sun, but also outdoor seating for those looking to enjoy the sunshine while they sip their coffee. Perhaps the best bit about the cafe is the designs (or “latte art”) the baristas make with the crema and milk foam; they can do everything from butterflies to cats! They also do great cakes that are made fresh each day.</p>

<h2>Casa di Giorgio Vasari</h2>
<p>The house was built, decorated and lived in by the Renaissance artist, Giorgio Vasari, and is a treasure-trove of Renaissance art. Vasari is an incredibly important figure in Italian Renaissance history and he is considered to be one of the first Art Historians. The house was sumptuously decorated with Vasari’s own frescoes as well as work by various artists. The archives within the house are fascinating and there are many handwritten documents of correspondence between Vasari and his famous contemporaries such as Michelangelo and even Pope Pius V! In an analysis of over 100,000 the findings revealed that the average age of solo travellers is 54 years old; which may come as a surprise to those who pictured a 20-something group backpacker! It also showed that solo travelling carries less of a stigma of being for “singles” and people are becoming increasingly confident, especially women and opting to travel alone. As travel writer Cathy Wilson notes: “this is a trend that looks only set to increase”.</p>

<p>While in Venice it would be a crime not to sample the fantastic Prosecco! The Veneto region is one of Italy’s most important wine producers in terms of both quantity and quality. Prosecco is a great alternative to Champagne, and a fraction of the price, and so it is worthwhile seeking out a good bottle to bring home with you. Our favourites are Bele Casel’s Prosecco Asolo Extra Dry and Bisol, Crede Prosecco Valdobbiadene Brut.</p>
<h2 style="text-align: center;"><strong>4. Amalfi Coast Goodies </strong></h2>
<p>For those visiting the Amalfi coast you will enjoy some of the best seafood in the world. Sadly, fish isn’t too easy to bring home in your suitcase. However, an alternative would be to bring a bottle of Colatura di Alici; it is a liquid produced on the Amalfi coast made from pressed anchovies. It might not sound delicious, but a few drops can transform pasta dishes. Another option is to bring home a bottle of Limoncello. It tastes and looks like sunshine, and is the perfect thing to take you back, long after your suntan has faded.</p>

<p>A great memento to fill your suitcase with during your cooking holiday in Sicily is the delicious nuts that are grown in abundance across the island. During early spring the countryside is covered with the light pink blossoms of the almond trees, however it is not until the high of the summer that the nuts are harvested. Almonds and pistachio nuts are used a great deal in Sicilian cooking and baking; such as Pasta con il pesto alla Trapanese (a pesto made with tomatoes and almonds) and can be found in all forms of biscuits such as Pasticcini Alle Mandorle.</p>

<p>The classic Margherita pizza was born after Italy’s Queen Margherita visited a pizzeria in Naples in 1889. The clever pizzaioli on duty created a pizza that represented the colours in the Italian Flag with tomato, mozzarella and basil – the pizza was a hit with the Queen and has been a favourite all over the world ever since! </p>

Many cooks claim to have been the first to come up with the delicious combination. Whoever it was, having this dessert around makes the world a better place. The name Tiramisu literally translates as “pick-me-up” and thanks to the high calorie count of the mascarpone and caffeine from the coffee, it does exactly that! </p>

<p>With spectacular views that change dramatically with the seasons, this naturally beautiful estate is located in the ancient heart of Tuscany. The timeless estate is perfect for our guests who come to Tuscany looking for the classic landscape with its rolling hills that is quintessentially Italian.</p>

<h3 style="text-align: center;">Villa Borgoluce</h3>
<p>The area surrounding this villa was absolutely stunning. The estate is over 1,000 hectares of woodland, vineyards and farmlands in the province of Treviso. This villa was situated in the hills with brilliant views in all directions and the enchanting San Salvatore Castle in the far distance. So beautiful!</p>

<h3 style="text-align: center;">The Quiet Streets of Venice</h3>
<p>While Venice is undoubtedly beautiful and has some magnificent architecture – it can get quite busy. So, when in Venice I like to find quiet spots for painting; it is great to get away from the hustle of the busy streets and to sit down beside the smaller canals, away from the tourists, and paint. It was fun for our guests as they got to see more of the city than the usual tourist trails.</p>
<h3 style="text-align: center;">Castelletto di Montebenichi</h3>
<p>Our trip to Montebenichi really was the icing on the cake, dramatic views in all directions. At the top of the hill is the Castelletto and surrounding it is the charming little hamlet of Montebenichi. From Montebenichi you can miles of olive groves, winding roads, medieval villages and Chianti vineyards. It is really stunning.</p>
<h3 style="text-align: center;">Siena</h3>
<p>This year we had a fantastic day in Siena with my painters working in the Piazza del Campo and at the Duomo di Siena. The medieval city is an UNESCO world heritage site and there are so many incredible monuments, buildings, churches, squares and bridges - so it is a great place to visit for us artists! While in Siena it is worth having a look in local galleries to see Siena’s Renaissance art tradition, known as Sienese School, which was inspired by French Gothic and Byzantine art.</p>

One of the best restaurants in Amalfi is called Eolo that has delicious food and beautiful view across the bay. Their wine list is great as is their seafood.</p>

This is the best way to see this picturesque coast without having to encounter the tricky roads with its hairpin bends and whizzing Vespas! The walk is a spectacular 12km trail that is well worth the effort as the views are truly awe inspiring!</p>

<p class="ListParagraphCxSpMiddle">While in Amalfi Coast, make the short trip along the coast to the picturesque town of Ravello. Ravello is one of the most glamorous, charming stops on the Neapolitan Riviera and is lovely place to spend the day wandering along the quiet streets of coloured stucco houses and lemon groves. Ravello is also a good starting point for numerous walks to Minori or the ancient village of Scala. </p>

<h2>1. Year Menu - Primi Piatti</h2>
<h3>Tagliatelle con Gamberi e Zucchine (Tagliatelle with Shrimps and Courgette) - Serves 5</h3>
<p>400g egg tagliatelle<br/>500g prawns<br/>4 courgettes<br/>50g parmesan<br/>20g pine nuts<br/>3 cloves of garlic<br/>Basil<br/>Salt<br/>Olive oil</p>
<h3>Method </h3>
<p>1. Drop the courgettes in boiling water and cook for 5 minutes. Then remove from water, slice in half lengthways and scoop out the white seedy part and discard.<br/>2. Add the courgette to the parmesan, 1 clove of garlic, basil and pine nuts and blend into a puree.<br/>3. Add the tagliatelle to boiling, well salted water.<br/>4. Finely chop the remaining garlic and fry in a little olive oil. Add the peeled prawns.<br/>5. When the pasta is ready drain, add the courgette sauce to the pan, stir and add the pasta. Serve.</p>

<h2>2. New Year Menu - Secondi Piatti</h2>
<h3>Lenticchie Stufate di Capodanno (New Year Lentils with Sausages) - Serves 5</h3>
<p>3 - 4 tablespoons olive oil<br/>1 onion (finely chopped)<br/>A pinch of salt<br/>500g puy lentils<br/>1 big garlic clove finely chopped<br/>8 Italian sausages<br/>100ml red wine<br/>50ml water<br/>A handful of flatleaf parsley</p>
<h3>Method</h3>
<p>1. Boil the lentils in water until cooked, then drain and add to a bowl.<br/>2. Fry the finely chopped onion in a little olive oil until soft and add the bruised garlic.<br/>3. Cook for a few minutes and then add the sausages. Fry until browned all over and then add the wine and water.<br/>4. Cover the pan and leave to cook for 15 minutes.<br/>5. Remove the sausages from the sauce, season to taste and add a little extra water if needed, and add the lentils.<br/>6. Stir well and then serve the sausages on a bed of the lentils and sprinkle with parsley.</p>

<h2>3. New Year Menu - Dessert</h2>
<h3>Panettone farcito (Stuffed Panettone) - Serves 5</h3>
<p>1kg good quality ricotta<br/>140g caster sugar<br/>70g candied fruit, finely chopped<br/>40g flaked almonds<br/>50g plain chocolate shavings/chips<br/>1 tbsp cocoa powder, plus extra for dusting<br/>600g panettone<br/>175ml Vin Santo or other sweet dessert wine</p>
<h3>Method</h3>
<p>1. Cut a round disc of pannettone and slice the remaining pannettone into long slices that are roughly 1inch thick.<br/>2. In a deep bowl, line with cling film and then line with the pannetone. Using a pastry brush, brush the pannetone with ¾ of the vin santo.<br/>3. In a separate bowl mix the ricotta and sugar together until well combined. Stir in the fruit, almonds, chocolate and cocoa powder.<br/>4. Spoon in the ricotta mixture into the bowl with the pannetone and place the pannettone dish on top. Drizzle with the remaining vin santo.<br/>5. Cover with cling film and place in the fridge with a weight on top (a bag of sugar for example) and leave to chill for 6 hours.<br/>6. To serve, remove the cling film from the top and invert the bowl onto a plate. Carefully remove the bowl and peel off the cling film. Dust with cocoa powder.</p>

<p><strong><em>When and for how long did you go on our cooking holiday in Tuscany?</em></strong></p>
<p>I was there in April for a long weekend. It's a lovely time of year to visit Italy, not too hot and before the major crowds arrive in the summer.</p>
<p></p>
<p><em><strong>As an experienced traveller, what did you enjoy most about your holiday?</strong></em></p>
<p>The cooking classes themselves were great fun and then getting together, sitting at a large round table, to eat the food we had all made. </p>
<p></p>
<p><strong><em>Do you feel the balance of classes and time to relax was appropriate?</em></strong></p>
<p>Yes, it was a perfect mix.</p>
<p></p>
<p><strong><em>What trips did you go on and did you enjoy them?</em></strong></p>
<p>We had two excursions, a visit to a vineyard for some wine tasting and a morning in Florence with enough time to see the major sites there, followed by a great lunch in a traditional osteria.</p>
<p></p>
<p><strong><em>Did you like your accommodation?</em></strong></p>
<p>We were in a lovely traditional farmhouse on a large rural estate, the perfect setting. My room was charming with a beautiful view across the garden, the fields and the hills beyond.</p>
<p></p>
<p><strong><em>Of course, one of the most important aspects on a cooking holiday is the food. What was your favourite dish?</em></strong></p>
<p>That's a really hard one as everything was so very good. The tiramisu was the best I've ever had and I've made it at home since. It's a big hit with my family and friends. The risotto was also memorable, as was a delicious vegetarian bake we made. So tasty. How can I pick just one? </p>
<p></p>
<p><em><strong>That's good to hear! Going on the holiday as a single traveller, were you nervous about the trip?</strong></em></p>
<p>Not really. I'm used to it, however, if I had been, my worries would have vanished as soon as I met everyone else at the airport. I knew straight away that we were going to have some laughs together. Plus, there were two other solo travellers in the group.</p>
<p><strong><em><br/>Was it easy to get on with your co-travellers and our Italian staff?</em></strong></p>
<p>Very. Cooking together is a great way to get to know other people and all the Italian staff couldn't have been nicer. There was plenty of laughter throughout the holiday.</p>
<p></p>
<p><strong><em>So, what advice can you give to those who consider going on a single holiday with Flavours, but might be a little scared?</em></strong></p>
<p>Don't be. You are met at the airport in Italy and everything is very well organised. You'll soon get to know your fellow travellers and feel like old friends.</p>

<p>Sandro Botticelli is a Florentine artist who was the favourite artist of the powerful, Florentine merchant banking family, the Medici. His most creative period saw <em>The Birth of Venus</em> which is to this day one of the most famous and widely recognised works. <p>Michelangelo Merisi, known as Caravaggio, is one of Italy’s most notorious artists. He was famous for his pioneering technique of <em>chiaroscuro, </em>the strong contrasts of light and dark that characterises his paintings; but also for his infamous temper. His lengthy police record listed sword fights, countless brawls and in 1606 he was forced to flee Rome after murdering a man.</p>
<p>His violent nature can be seen in many of his works such as his dramatic beheading scenes such as his work David with the head of Goliath. The severed head thought to be a self portrait of the artist!</p>
<h3><strong>No 3. Leonardo Da Vinci</strong></h3>
<p>Da Vinci is one of the greatest creative minds in history, who was not only an artist, but an inventor, engineer and a scientist. His collection of artworks reveal his genius and that he actually ‘invented’ the bicycle, airplane and parachute hundreds of years before their time. His most famous work is the Mona Lisa and has captivated and mystified audiences since its creation. </p>

<p>Within the Galleria dell'academia in Venice you can find many paintings by the great Venetian artist Gentile Bellini. One of our favourites is Procession in Piazza San Marco (c1496) which gives an amazing insight into what the square looked like in the 15<sup>th</sup> century before many of the Byzantine buildings were replaced. </p>
<h3><strong>No 5. Carpaccio</strong></h3>
<p>Number 5 on our list is Vittore Carpaccio - the Venetian artist, not the beef dish. In his work <em>The Healing of the Mad Man </em>you can see so many fascinating details that allow us to see what Venice once looked like; such as the original wooden RialtoBridge that subsequently collapsed a few years after this painting was completed. </p>
<h3><strong>No 6. Giovanni Fattori</strong></h3>
<p>Giovanni Fattori was a leading member of the The Macchiaioli (a group of Italian artists influenced by the French Impressionist movement) and spent much of his career working in Tuscany. He was particularly inspired by the Tuscan landscape and used the area of Maremma repeatedly. </p>

<p>Number 7 is a female artist who is considered one of the most accomplished artists of the Italian Baroque period – which is no small feat in a time when female painters were not easily accepted. In her works we can see many examples of strong and suffering women from both myths and the Bible. Her most famous work<em>Judith Slaying Holofernes</em> (now in the Uffizi Gallery) shows a graphic, brutal scene of Judith slicing Holofernes throat. </p>
<h3><strong>No 8. Titian</strong></h3>
<p>Titian (also known as Tiziano Vecellio) is celebrated for his incredible use of colour and subtle meanings. This can perhaps best be seen in his stunning, mythological work; <em>Venus of Urbino</em> which is held in the Galleria degli Uffizi in Florence. Thought to be painted for Francesco Maria I della Rovere, wife of the Duke of Urbino, the work depicts Venus, the goddess of love. Titian’s<em>Venus of Urbino </em>is a representation of the perfect Renaissance woman who, like Venus, was a symbol of beauty, love and fertility.</p>
<h3><strong>No. 9 Annibale Caracci</strong></h3>
<p>Annibale Caracci was born in Bologna and together with his brother and cousin opened a school for artists where they established an eclectic style that took inspiration from Florentine and Venetian artists. Annibale was famous for his religious works such as <em>The Flight into Egypt</em> and <em>Domine, Quo Vadis</em>; however his less formal, genre paintings are arguably his most interesting. For example, works such as <em>The Bean Eater</em> and<em>The Butchers Shop</em> which document daily life in a more course, scratchy manner show his studies of the everyday man. </p>

<p>To round up our top 10 of Italian artists we have Giotto di Bondone; one of the first artists to contribute to the Italian Renaissance. His <em>Kiss of Judas</em> (which is thought to be as early as 1304) is a stunning fresco by Giotto that can be seen in the Scrovegni Chapel in Padua. The work is a great example of what a pioneer Giotto was. His style was wholly new in that he arranged his scenes so that they were a believable space with a real sense of depth. Giotto broke from the traditional, very flat Byzantine style and brought to life the great art of painting as we know it today! </p>
