Kristen, the best trail ride/lesson I've ever experienced was at a dude ranch in the Galilee, of all places: Vered Hagalil. The Rocky Mountains are more dramatic than the Galilee, but the lesson was top-drawer, we passed antelopes and gorgeous flowers (this was in late February), and the place's motto is "Shalom, Y'all." http://www.veredhagalil.com/

There's also a Relais & Chateaux spa resort with an organic kitchen in the area. I slept there one night but did not get a chance to test-drive the massage therapists or fitness instructors. http://www.mizpe-hayamim.com/

I leave tomorrow, so will be flying by the seat of my pants, as I usually do, but good to have a few things to go by. I will certainly keep you posted on what I end up doing.
