Any of the Everglades National Park ranger-guided tours.  They have walking tours, bike hikes, canoe trips, tours where they explain about the flora and fauna of the Everglades, sunrise tours, sunset tours, night tours.... whatever appeals to you.  Most are free after you pay the Park entrance.  I have taken most of them and hightly recommend doing it.  The best time is from November until late April or early May.  After that, the rainy season and the mosquitoes makes it hard to enjoy the Park.

Thanks
We hugely enjoyed Billie's Swamp Safari (both the drive to the facility and the airboat tour there). I've posted many photos and a video from the airboat on my blog at http://explorenorth.com/wordpress/?p=614  For $15 pp, we consider it to be excellent value.
Thanks. We saw a ton of signs for this. We went to another location and seconds before we arrived, the skies opened and the tours shut down for the day due to rain. Next time, I guess.

Be sure to drive the loop road in Big Cypress. It is a little rough but filled with wildlife. Also I did an article about some of the wildlife in the Everglades here http://www.americanroads.net/Gladesglide.html
