I'm planning a trip to the Americas in Aug/Sep this year. Plan is approx a week skiing in Chile and seeing Santiago, maybe a few days in Buenos Aires, 4-5 days in Vegas, and a week to take in Texas and probs some surrounding area.

 

Any tips on what to do in/around Texas?

 

Must dos for me are; Rangers vs Red Sox in Arlington, some sort of horse riding adventure, and a road trip...

 

Considering driving to New Orleans and spending a few days there. Is there much to do and see between Dallas and New Orleans?

 

Any idea where I can get a horse riding adventure, maybe drive cattle?

 

Advice would be myuch appreciated.

Depends on what part of Texas you would be visiting and your interests. 
Remember the Alamo!  Seriously, this is a must-see as an icon of Texas history in San Antonio.  And while you're there, there's some great Mexican food, plus a Spanish missions trail in the vicinity.  This could be part of your road trip. (And BTW, Austin with its great music scene is right up the highway from San Antonio.)
